Cold Ginger Chicken

Ingredients

  • 1/2 cup fine chopped or grated fresh ginger

  • 1/2 cup green onions

  • 1/4 teaspoon Himalayan pink salt

  • 1/2 cup light olive oil


Directions

  1. Mix all ginger onion sauce ingredients together. Let sit out on the counter at room temperature for about 30 minutes. Store in the fridge.

  2. Take out what you need about 15-30 minutes before serving, so the sauce becomes a liquid again.

  3. Serve with any precooked compliant chicken you have (rotisserie chicken, Instant Pot boneless skinless chicken breasts, shredded leftover chicken) atop some salad greens or cauliflower rice. Also great with fish or cooked eggs!
